Banana Oatmeal Clusters



These oatmeal clusters come together in a flash. I am a huge fan of them because they have a short ingredient list, and they are naturally sweet from the bananas and just a touch of chocolate. They are perfect for snacking.

Ingredients:

3 bananas, mashed
2 cups rolled oats
1 / 2 cup mini chocolate chips (or carob chips to make this vegan)
1 / 3 cup canola oil or coconut oil 
1 tsp. vanilla extract
1 / 2 tsp. cinnamon

Directions:

Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.

In a large bowl, mash the bananas. Stir in the oats, chocolate chips, oil, vanilla, and cinnamon. Mix well, cover with plastic wrap, and allow to sit for 15 minutes.

Drop balls of dough onto prepared cookie sheet. These won't flatten into a "cookie shape" while baking, hence why they're called clusters rather than cookies. Bake for 20 minutes or until lightly brown, then let cool on a wire rack. Store in an airtight container.
