Baked Mini Donuts

Not only are they adorable, these donuts are a healthier version of a favourite treat because they are baked and not fried. You won't even be able to tell the difference! Yay for donuts you can feel good about! 

Ingredients:

1 cup all-purpose flour
1/2 cup sugar
1 and 1/2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/2 cup milk
1/2 tsp. white vinegar
1/2 tsp. vanilla extract
1 egg
1/4 cup margarine

Icing Glaze:

1/2 cup icing sugar
1 Tbsp. milk

Coloured sprinkles to decorate


Directions:

Preheat oven to 350 degrees F. Grease a mini donut or regular donut pan with non-stick cooking spray; set aside. If you don't have a donut pan then you can hand shape the donuts and just cook them on a parchment paper covered baking sheet. They won't be as pretty looking but they'll still taste just as good!

Put the milk, vinegar, vanilla extract, egg, and margarine in a small pot and place on the stovetop on low heat. Whisk the ingredients together to blend well. Do not let the mixture get too hot (we don't want scrambled eggs!) - it should just be warm to the touch. 

In a large bowl, whisk together the flour, sugar, baking powder, salt, nutmeg, and cinnamon. Add the wet ingredients into the bowl and mix until just incorporated. Do not over mix. The batter will be very very sticky, but don't worry! 

Take a Tablespoon's worth of dough (if using the mini donut pan) and scoop it directly over the individual mold. Then take your fingers to press it out evenly into the mold. If you are not using a donut pan then wet your hands very well (or the dough will stick to them) and shape the donuts out by hand, placing them onto the prepared baking sheet. Keep wetting your hands as soon as the dough sticks.

Bake the donuts for 10-12 minutes. You don't want them too brown, but they should be firm to the touch. Cool completely on a wire rack and before decorating. Whisk together the icing glaze ingredients in a small bowl and pour out the coloured sprinkles into a separate bowl. Dip the top of a donut into the icing glaze, then dip it into the bowl of sprinkles, and set it back on the wire rack so that the glaze can harden up. Put wax paper under the wire rack to make clean-up easier! Makes about 20 mini donuts.
