Marinated Bean Salad


This fresh, bright summer bean salad is so simple to make and packs a lot of protein! It's a light  and refreshing dish that is perfect for a summer BBQ or potluck. It makes a great side salad, light lunch, or a vegetarian main.

Ingredients:

1 can chickpeas, drained and rinsed
1 can white navy beans, drained and rinsed
1/4 red onion, finely diced
2 cloves garlic, minced
1/2 bunch fresh parsley, finely chopped
2 Tbsp. olive oil
2 tsp. lemon juice 
2 tsp. dried oregano or Italian seasoning
Salt and pepper to taste

Directions:

Combine all ingredients in a large bowl and gently stir to mix. Cover and refrigerate 1-2 hours before serving. The longer you allow it to marinade the more flavourful it will be!
